Casseroles are versatile dishes which often contain leftover meat, fish, seafood, vegetables, pasta or rice, with sauce, cheese, seasonings, herbs - all baked together and served as a one-dish meal. A scalloped dish is a casserole in which the ingredients are layered in a baking dish with a sauce and topping, then baked until it bubbles and the topping browns.
Most casseroles will freeze well, however, ingredients such as sour cream or herbs should be added when the dish is being reheated. Whenever possible, thaw overnight in the fridge.
