Unmold gelatins and aspics on a bed of fresh lettuce or endive - even dessert gelatins. Then garnish with fresh fruit slices, parsley, carrot curls, etc.

Fresh pineapple must be cooked before adding it to gelatin - otherwise your mixture will not set.

Chill your mold before filling, or rub it lightly with a paper towel and a tiny bit of salad oil. If you oil the mold, let the gelatin mixture cool before pouring into the mold.

To unmold, dip very quickly in a pan of hot water to loosen, being careful not the let the water come over the sides onto the gelatin. Place serving dish face down over mold, and invert quickly.
